Ingredients:
- Parotta / Flaky Parathas - 2 Nos, cooked
- Chicken curry [gravy] - ½ - ¾ cup
- Chicken, cooked and teared into small pieces - ½ - ¾ cup
- Egg - 2 Nos
- Onion, big sized - 1 Nos, finely chopped
- Tomato, big sized - 1 Nos, finely chopped
- Green Chilly - 3-4 Nos, finely chopped
- Pepper powder - 1 - 2 Teaspoon, adjust according to your spice level
- Mustard seeds - 1 Teaspoon
- Coconut oil - 1 Tablespoon
- Curry leaves - 1 sprig
- Salt as required
Instructions:
- Tear the parathas into small pieces and set aside.
- Heat oil in a kadai and splutter mustard seeds.
- Then add in the chopped onion, green chilly, curry leaves and saute till the onion becomes soft.
- Add in the chopped tomato and saute until the tomatoes are soft. No need to become mushy.
- Add in the eggs, pepper powder, salt and scramble it well.
- Once it turns nicely fried and blended with the mix, add in the teared paratha pieces and mix well.
- Now add in the chicken gravy and stir until the gravy is well blended with the paratha pieces.
- Finally add in the chicken pieces and stir continuously until the kothu paratha becomes almost dry on medium heat. Check for salt.
- Serve hot :)
