Ingredients:
For cooking chicken:
- Chicken - 100-150 Gms, cut into small cubes
- Pepper powder - ½ Teaspoon
- Salt to taste
- Oil to fry the chicken
For Rice:
- Basmati rice - 2 cup
- Eggs - 2 Nos
- Thinly sliced Carrot - ½ cup
- Finely chopped String beans- ½ cup
- Thinly sliced Onion – ¾ cup
- Green peas - ¼ cup, cooked
- Garlic – 3-4 cloves, finely chopped
- Pepper powder - 1 ½ - 2 Teaspoon
- Soy sauce - 1 ½ - 2 Teaspoon
- Oil - 2 Tablespoon
- Salt to taste
- Water as required
- Chopped spring onion to garnish
Instructions:
Initial preparation:
- In a bowl, mix together the chicken pieces, pepper powder, salt and set aside for 30 minutes.
- Cook the rice in enough water along with salt to taste; Drain the water and let the rice to cool completely.
- Heat oil in a pan; Add the marinated chicken pieces and fry till the chicken pieces are light golden in color; Remove from oil and set aside.
Fried rice Preparation:
- In a bowl, beat together the eggs, a small pinch of salt and pepper powder; Set aside.
- Heat oil in a big pan, add sliced onion, chopped garlic and sauté till the onion turns soft.
- Push the onions to the side of the pan and add ½ teaspoon of oil.
- Add the blended egg (step #1) in the oil. Scramble the eggs. Combine scrambled egg and the sautéed onion.
- Add in the sliced carrot, chopped beans, cooked green peas, pepper powder; Mix everything well and sauté for 2-3 minutes.
- Now add the fried chicken and soy sauce; Check for salt and mix well.
- Add in the cooked rice, mix well and fry for 1-2 minutes on low flame.
- Garnish with chopped spring onion and serve.
