Ingredients:
- Boneless chicken breast - 400 Gms
- Red bell pepper - 1 Nos, sliced
- Green bell pepper - 1 Nos, sliced
- White or Yellow Onion, large sized - 1 Nos, sliced
- Black pepper powder - ¼ Teaspoon
- Coriander leaves, chopped - 1 Tablespoon
- Olive oil - 2 Tablespoon
- Salt to taste
For Marination:
- Garlic powder - 1 Teaspoon, or garlic paste - 1 Teaspoon
- Black pepper powder - 1 Teaspoon
- Cumin powder - 1 Teaspoon
- Red chilli powder - 1 Teaspoon
- Lemon Juice - 2 Tablespoon
- Salt - 1 Teaspoon
For Assembling:
- Flour tortillas - 8 Nos, cooked
- Reduced fat sour cream or sauce of your choice
Instructions:
- Slice the chicken breast and cut into strips. Clean and wash thoroughly. Drain the water completely.
- Marinate the chicken with the ingredients mentioned in 'For Marination' and set aside for 20 minutes.
- Grill the marinated chicken strips on medium heat for about 4-5 minutes per side or until slightly charred. Set aside.(refer notes)
- Heat oil in a pan, add in the sliced onion and saute until soft.
- Add in the sliced bell peppers, season with salt and pepper powder.
- Saute until the peppers are soft on medium heat.
- Now add in the grilled chicken strips and combine well and cook for 2-3 minutes on low-medium heat.
- Add in the chopped coriander leaves and mix well. Remove from heat and set aside.
Assembling Fajita Roll:
- Place a cooked tortilla on the working surface, spread some sour cream.
- Place some chicken filling on one side of the tortilla. Roll it tightly and serve immediately.
Notes:
- Or Broil the marinated chicken strips on high heat for about 7-12 minutes per side or until slightly charred.
- You can also cook the chicken in a grill pan. For that, heat little olive oil in a grill pan over medium heat and grill the chicken strips until cooked through.
