Ingredients:
- Finely chopped Cauliflower - 1 cup
- Egg - 3 Nos
- Finely chopped Onion - ¾ cup
- Grated Coconut - ¼ cup
- Finely chopped Green Chilly - 2-3 Nos, adjust according to the spice level
- Turmeric powder - ¼ Teaspoon + 1 pinch
- Black Pepper Powder - ½ - 1 Teaspoon, adjust according to the spice level
- Mustard seeds – ½ Teaspoon
- Dried Red Chilly - 2 Nos
- Curry leaves - 1 sprig
- Coconut oil - 1 Tablespoon
- Water - 1 ½ cup
- Salt to taste
Instructions:
- Heat water in a pan, add in the chopped cauliflower, ¼ teaspoon of turmeric powder and salt.
- Cook till the cauliflower is cooked well. Drain the water completely and set aside.
- Heat oil in a pan, splutter mustard seeds. Add in the dried red chilly and fry for few seconds.
- Add in the chopped onion, green chillies and sauté till the onion becomes translucent.
- In between, beat the eggs; Once the onions are translucent add in the beaten egg and keep stirring until cooked.
- Then add in the cooked cauliflower, grated coconut, one pinch of turmeric powder, black pepper powder, curry leaves, salt and combine well.
- Sauté till the thoran becomes dry. Remove from fire and serve hot.
