   Happy Diwali   

Ingredients:
  • Cashew nuts - 1 cup
  • Thick Coconut Milk - ¼ cup
  • Fresh Cream - ¼ cup
  • Sugar - ½ cup
  • Cardamom powder - ¼ Teaspoon
  • Ghee - 1 Tablespoon
  • Fried Raisins - 5-8 Nos
  • Water - 2-4 Tablespoon
  • Edible Silver leaf- 1 Nos
Instructions:
  1. Soak the cashew nuts in water for 1-2 hours.
  2. Then grind the cashew nuts along with 2-4 tablespoons of water and make a fine paste. Set aside.
  3. Take a flat tray, grease it with little ghee and set aside.
  4. In a heavy bottomed pan, add in the sugar and coconut milk. Keep stirring till the sugar completely dissolves on low-medium heat.
  5. When it starts boiling, add in the cardamom powder, fresh cream and combine well on low-medium heat.
  6. Now set heat to very low, add in the cashew-nut paste and stir continuously. It will start bubbling at the initial stage.
  7. Now add in the ghee and continue stirring till the mixture leaves the sides of the pan and starts coming together as dough.
  8. Remove from heat and put the mixture on the greased tray and flatten the surface with a spatula.
  9. Place the fried raisins on top and gently press it with the spatula.
  10. Now place the silver leaf over the whole barfi. Carefully remove the silver leaf after 5 minutes.
  11. Once it is cooled, cut it into desired shapes. Enjoy...
