Ingredients:
- All-purpose Flour - 1 cup
- Ghee, Clarified Butter - ½ cup, texture should be solid
- Cardamom powder - 1 to 1 ½ Teaspoon, adjust according to your taste
- Sugar - 1 cup
- Egg - 2 Nos, at room temperature
- Milk - ¼ cup, at room temperature
- Baking Powder - ½ Teaspoon
- Baking Soda - ¼ Teaspoon
- a pinch of Salt
Instructions:
- Pre-heat oven to 350°F.
- Grease a 9X5 inch loaf pan and line it with parchment paper, set aside.
- In a bowl, sift together the all-purpose flour, baking powder, baking soda and salt for 2-3 times.
- Take ghee and sugar in a large mixing bowl. Beat until creamy, for about 3-4 minutes on medium speed.
- Then add in the eggs and beat well until creamy and fluffy, for about 2-3 minutes on medium speed.
- Now add in the flour mixture and milk alternatively as batches.
- Beat on low speed until just incorporated after each addition. Don't over-mix.
- Add in the cardamom powder and mix well.
- Don't forget to scrape down the sides of the bowl occasionally.
- Pour the batter into the prepared pan and level the top.
- Tap the pan several times to release the air bubbles.
- Place the pan onto the middle rack of oven and bake for 40-50 minutes or until a wooden skewer inserted comes out clean.
- Remove from oven, transfer the cake to a wire rack, and let it cool completely.
- Once cooled, cut it into pieces and enjoy.
Notes:
- Ghee should be in solid form. Please avoid semi-solid or liquid textured ghee.
