Ingredients:
- Yellow cake mix - 1 cup, refer notes
- All-purpose flour - ¼ cup
- Unsalted butter, softened - 5 Tablespoon
- Sugar - ¼ cup
- Vanilla extract - 1 Teaspoon
- Rainbow sprinkles/nonpareils - 1 Tablespoon
For chocolate coating:
- White chocolate chips - 1 cup or 225 Gms
- Vegetable shortening - 1 ½ Teaspoon
- Red or pink food color - few drops
- Rainbow sprinkles/nonpareils for sprinkling
Instructions:
- Arrange a cookie tray with parchment paper and set aside.
- In a mixing bowl, add in the yellow cake mix, all-purpose flour, butter, sugar and vanilla. Mix together using your hands and make a soft dough.
- Once the dough is ready, add in the rainbow sprinkles and mix it again.
- Now divide the dough into 20-22 equal sized balls and keep them in freezer for 30 minutes.
- After 30 minutes, you can start working with the chocolate outer cover preparation.
- In a pan/oven-safe bowl, add in the white chocolate chips, shortening and food color. Double boil until the mix is completely melted - OR - Heat until the mix is completely melted in 30 second intervals in a microwave oven. Stir occasionally.
- Take out the prepared dough balls from freezer. Dip each balls in the melted chocolate using two forks(refer video) and place it in the parchment paper lined cookie tray.
- Immediately sprinkle few rainbow sprinkles on top of the truffles.
- Serve after the chocolate coating is firm.
Notes:
- Basic yellow cake mix recipe(for this recipe - approx: 1 cup),
- In a bowl add in ½ cup + 2 tablespoons of all-purpose flour, 6 tablespoons of sugar, 1 teaspoon of baking powder, 1 tablespoon of softened butter and ¼ teaspoon of salt.
- Mix together using a spatula/wire whisk with out any lumps.
Yield: Makes about 20-22 truffles
