Ingredients:
- Okra/Bhindi/Ladies Finger - 250-300 Gms
- Onion - 1 medium, finely chopped
- Green chilies - 1-2 Nos, chopped
- Turmeric powder - ¼ Teaspoon
- Red Chilli powder - 1 Teaspoon
- Cumin powder - ½ Teaspoon
- Mustard seeds - ½ Teaspoon
- Chopped coriander leaves - 1-2 Tablespoon
- Curry leaves - 1 sprig
- Vegetable oil - 2 Tablespoon
- Salt as required
Instructions:
- Wash and wipe dry all the okra using a clean kitchen towel. Slice them into thin rounds(approx: ¼ - ½ inches) and set aside.
- Heat oil in a wide heavy bottomed pan, splutter mustard seeds.
- Add in the chopped onion, green chillies, curry leaves and saute until the onions become translucent.
- Then add in the sliced okra, turmeric powder, salt and saute for 2-3 minutes on medium flame.
- Then set heat to low, and cook until the okra is soft and tender. This takes about 10 to 14 minutes on low flame. Stir occasionally. No need to cover the pan.
- Once okra is soft and tender, add in the red chilli powder and cumin powder. Check for salt. Mix well and fry for 2-3 minutes.
- Remove from heat, sprinkle chopped coriander leaves on top and serve hot.
