Beef Ularthiyathu, Kerala style Roasted Beef Fry
Ingredients:
  • Beef - 1 Kg, cut into small cubes
  • Onion, medium sized - 3 Nos, thinly sliced
  • Green chilly - 2-4 Nos, slit
  • Vinegar - 1 Tablespoon
  • Turmeric powder - ½ Teaspoon
  • Kashmiri chilly powder - 1 Tablespoon
  • Coriander powder - 2 Tablespoon
  • Garam masala - 1 Teaspoon
  • Pepper powder - 1 Teaspoon
  • Thinly sliced coconut pieces - ½ cup
  • Dried red chilli - 3 Nos
  • Curry leaves - 2-3 sprig, divided
  • Coconut oil - 2-3 Tablespoon
  • Salt to taste

For Ginger-Garlic paste:

  • Ginger - 1 inch piece
  • Garlic - 20 cloves
  • Water - 1 Tablespoon
Instructions:

Initial Preparation:

  1. Clean and wash the beef pieces, drain the water completely and set aside.
  2. Grind together the ingredients mentioned in 'For Ginger-Garlic paste' and make a fine paste. Set aside.
  3. In a pan, add in the kashmiri chilly powder, coriander powder, turmeric powder, pepper powder, garam masala and dry roast for 1 minute on very low heat. Set aside.

Cooking Beef:

  1. In a pressure cooker, add in the cleaned beef, roasted powders, sliced onions, ginger-garlic paste, green chilies, vinegar, salt, half of the curry leaves and mix well.
  2. Close the pressure cooker and put on the weight, cook for about 5-8 whistles on medium heat or until the beef is nicely cooked. Remove from heat.
  3. Once the pressure is settled down naturally, open the cooker and cook till the water content evaporates completely on low-medium heat. Stir periodically.

Beef Roast Preparation:

  1. Heat coconut oil in a heavy bottomed pan, add in the sliced coconut pieces and saute until slightly brown.
  2. When it starts to brown slightly, add in the dried red chilies, remaining curry leaves and saute for few seconds.
  3. Transfer the cooked beef into this and mix well, saute for about 5 minutes on low heat.
  4. Remove from heat and serve warm.
