Ingredients:
- Green beans - 250 Gms
- Green chillies - 2 Nos, chopped
For coconut mix:
- Grated Coconut - ¾ cup
- Cumin Seeds - ¼ Tablespoon
- Turmeric Powder - ¼ Tablespoon
- Chilli Powder - ¼ Tablespoon
- Garlic - 1 clove
- Shallots - 1-2 Nos
- Salt to taste
For tempering:
- Chopped Shallots - 1-2 Nos
- Mustard seeds - ½ Teaspoon
- Curry leaves - 1 sprig
- Coconut Oil - 1-2 Tablespoon
Instructions:
- Cut green beans into small(½ cm) pieces and set aside.
- Coarsely grind grated coconut, garlic, turmeric powder, chilli powder, cumin seeds, shallots, salt and keep it aside.
- Heat coconut oil in a pan, splutter mustard seeds; Then add curry leaves, chopped shallots and fry till the shallots are light brown in color.
- Then add the chopped beans, green chillies and saute for 30 seconds in low flame, then add the coconut mix(step #2) along with little water and combine well.
- Cover and cook on low flame for 5-10 minutes or till the water content evaporates completely. Don’t forget to stir occasionally.
- Remove from flame and serve hot.
