Ingredients:
- Fully Ripe Bananas(Robusta type) - 5 - 6 medium sized, 1 KG approx:
- Grated Jaggery - 1 ¼ cup
- Sugar - ½ cup
- Lemon Juice - 1 Teaspoon
- Cashew Nuts, broken - ½ cup
- Cardamom Powder - ½ Teaspoon
- Dry Ginger Powder - ¼ Teaspoon
- Ghee - 3 - 5 Tablespoon
Instructions:
- Peel the bananas, cut them into small pieces. Then puree it in a blender.
- Add the banana paste, grated jaggery and sugar into a heavy bottomed wide pan, mix well.
- Once it starts boiling, add in the lemon juice and mix well.
- Then stir for about 12 to 15 minutes or until most of the water is evaporated on medium heat.
- Once the mixture turns slightly thick, add ghee one tablespoon at a time. Stir well after each addition.
- When the mixture turned nicely thick and glossy, add in the broken cashew nuts, cardamom powder and dry ginger powder.
- Mix well and continue cooking, the mixture will start leaving the sides of the pan and the ghee starts to ooze out.
- Then the mixture will come together as a mass. Cook for another 3-4 minutes.
- Then transfer the Halwa to a greased pan. Flatten the top with the back of a greased spoon.
- Serve warm.
