Banana Halwa, Banana Preserve, Pazham Varattiyathu
Ingredients:
  • Fully Ripe Bananas(Robusta type) - 5 - 6 medium sized, 1 KG approx:
  • Grated Jaggery - 1 ¼ cup
  • Sugar - ½ cup
  • Lemon Juice - 1 Teaspoon
  • Cashew Nuts, broken - ½ cup
  • Cardamom Powder - ½ Teaspoon
  • Dry Ginger Powder - ¼ Teaspoon
  • Ghee - 3 - 5 Tablespoon
Instructions:
  1. Peel the bananas, cut them into small pieces. Then puree it in a blender.
  2. Add the banana paste, grated jaggery and sugar into a heavy bottomed wide pan, mix well.
  3. Once it starts boiling, add in the lemon juice and mix well.
  4. Then stir for about 12 to 15 minutes or until most of the water is evaporated on medium heat.
  5. Once the mixture turns slightly thick, add ghee one tablespoon at a time. Stir well after each addition.
  6. When the mixture turned nicely thick and glossy, add in the broken cashew nuts, cardamom powder and dry ginger powder.
  7. Mix well and continue cooking, the mixture will start leaving the sides of the pan and the ghee starts to ooze out.
  8. Then the mixture will come together as a mass. Cook for another 3-4 minutes.
  9. Then transfer the Halwa to a greased pan. Flatten the top with the back of a greased spoon.
  10. Serve warm.
