Ingredients:
- Ripe Banana, mashed - 1 ½ cup
- Lemon Juice - 2 Teaspoon
- Unsalted Butter - ¾ cup, soften
- Sugar - 2 ¼ cup
- All-purpose flour - 3 cups
- Baking soda - 1 ½ Teaspoon
- Salt - ¼ Teaspoon
- Eggs - 3 Nos
- Vanilla extract - 2 Teaspoon
- Buttermilk - 1 ½ cups
Instructions:
- Preheat oven to 275°F.
- Prepare a 9 x 13 pan and line it with parchment paper.
- In a small bowl, add in the mashed banana and lemon juice; Combine well and set aside.
- In a bowl, mix together the all-purpose flour, baking soda, salt and set aside.
- In a large mixing bowl, add in the butter, sugar and beat until combine well.
- Add in the eggs, one at a time and beat until soft and fluffy after each addition. Add in the vanilla essence and mix well.
- Add in the flour and buttermilk as batches. Beat until light and fluffy. Stir in banana mixture.
- Pour the batter into the prepared pan and bake for 60-80 minutes or until a wooden skewer inserted in centre comes out clean.
- Remove from oven and place directly into the freezer for 45 minutes and serve after.
