Ingredients:
- Chicken - 1 Kg, cut into medium sized pieces
- Finely chopped onion - 2 cup
- Tomato (large sized) - 1 Nos, finely chopped
- Yogurt - ½ cup
- Cinnamon - 1 inch stick
- Cardamom - 4 pods
- Cloves - 3 Nos
- Star anise - 1 Nos
- Kasuri methi - 1 pinch
- Chopped coriander leaves - 2 Tablespoon
- Oil - 2-3 Tablespoon
- Water - ¼ cup
- Salt to taste
For ground paste:
- Ginger - 1 ½ inch piece, chopped
- Garlic - 3 cloves
- Kashmiri chilli powder - 2 Tablespoon
- Turmeric powder - ½ Teaspoon
- Blanched Almonds - 15 Nos
- Cashew nuts - 10 Nos
Instructions:
Initial Preparation:
- Clean and wash the chicken pieces; Drain the water completely and set the chicken aside.
- Grind together the ingredients mentioned in 'For ground paste' and make a fine paste using little water and set aside.
Badami Chicken Preparation:
- Heat oil in a heavy bottomed pan, add the whole spices and fry for few seconds.
- Now add the chopped onions and fry till the onion turns translucent and slightly golden on medium heat.
- Add the tomatoes and sauté till the tomatoes are mashed well.
- Then add the chicken pieces along with ground masala paste and sauté for about 4-5 minutes on a medium heat.
- Then add water and mix well; Cover and cook until the gravy has little thickened up on low heat; Don't forget to stir occasionally.
- Now add the salt, whisked yogurt, kasuri methi and combine well. Cover the pan and cook till the chicken is done and the gravy become thick.
- Remove from heat, garnish with chopped coriander and serve hot.
