Ingredients:
- Fully ripe Sweet Apricots, diced - 500 Gms, 3 cups approx:
- Fully ripe Pineapple, diced - 500 Gms, 3 cups approx:
- Sugar - 1 - 2 cups, adjust the quantity according to your taste
- Lemon juice - ½ - 1 Tablespoon
Instructions:
- Coarsely grind together the apricot and pineapple pieces in a food processor.
- Add this mixture into a heavy bottomed pan and mix well.
- Cover and cook for 5-7 minutes on medium heat.
- Now add in the sugar, lemon juice and mix well.
- Cook over medium heat until the mixture thickens for about 25-35 minutes. Stir frequently until thick.
- Remove from heat and allow to cool completely.
- Then transfer to a clean airtight glass container, and store in the refrigerator for up to 1 month.
